Yuta Ito
1989年9月23日生まれ。東京都出身。中学時代から料理の道を志し、高校卒業後エコール辻東京都フランスイタリア料理マスターカレッジに入校。卒業後トラットリアロアジ、神楽坂スタジオーネにてイタリア料理の基礎を学んだ後に渡伊。シチリアのHostaria del vicoloでイタリア料理の見識を深めるべく邁進する日々を送る。帰国後はKNOCK CUCINA BUONA ITALIANAに入社し、ソムリエ資格を取得。日夜シェフの金子と共に料理とワインの楽しみ方を追求している。

Jiro Numata
Born on January 14, 1975, in Saitama, Japan. With 22 years of experience as a sushi chef, he began his career in the food industry as a kitchen hand at a Japanese restaurant in Sydney. After returning to Japan, he pursued the path of a sushi chef in earnest. He honed his skills at renowned restaurants in Ginza and Nihonbashi, including the famous "Nakata." Unable to forget his life in Australia, he returned to the country and served as the head sushi chef at the esteemed restaurant "Wasabi" for five and a half years, eventually obtaining permanent residency in Australia. Aiming to promote Japanese culture and spirituality through authentic sushi, he opened "Sushi Kuon" in 2024.
